With a little twist on a classic, you can make this delicious Thai Peanut Chicken salad. High in protein and healthy fats, this recipe is amazing on top of a salad or in a lettuce wrap!

Ingredients: For the Salad:
  • 4 chicken breasts, cooked and shredded
  • 1 red pepper, finely diced
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • ¼ cup green onion, diced
  • ½ cup cilantro, chopped
  • 1 cup peanuts, chopped
  For the Sauce:
  • 1 cup Daiya yogurt
  • ¼ cup peanut butter, smooth and low-fat (we recommend using powdered peanut butter for this recipe for the healthiest option)
  • 2 teaspoons freshly ground ginger
  • ¼ cup lime juice
  • salt, to taste
  Instructions:
  • Mix all of the salad ingredients into a large bowl and set aside. In a small bowl, mix together the sauce ingredients and set aside. Next, pour sauce mixture onto the chicken salad and mix until evenly combined. Serve over greens or in a lettuce wrap!
