Thai Peanut Chicken Salad
With a little twist on a classic, you can make this delicious Thai Peanut Chicken salad. High in protein and healthy fats, this recipe is amazing on top of a salad or in a lettuce wrap!
For the Salad:
Ingredients:
- 4 chicken breasts, cooked and shredded
- 1 red pepper, finely diced
- 1 cup shredded carrots
- 1 cup shredded purple cabbage
- ¼ cup green onion, diced
- ½ cup cilantro, chopped
- 1 cup peanuts, chopped
- 1 cup Daiya yogurt
- ¼ cup peanut butter, smooth and low-fat (we recommend using powdered peanut butter for this recipe for the healthiest option)
- 2 teaspoons freshly ground ginger
- ¼ cup lime juice
- salt, to taste
- Mix all of the salad ingredients into a large bowl and set aside. In a small bowl, mix together the sauce ingredients and set aside. Next, pour sauce mixture onto the chicken salad and mix until evenly combined. Serve over greens or in a lettuce wrap!
