The weather we are having lately is making it feel more and more like FALL!! In order to celebrate and get our minds ready my favorite season, I wanted to post this amazing baked apple breakfast recipe! It is so easy - with only a few ingredients and super quick to make. This recipe is so good, don't worry about limiting it to just breakfast. Make it for lunch, dinner, OR dessert! It is that good :).

  Ingredients:
  • 2 cups old-fashioned rolled oats
  • 3 cups water
  • 1 tbsp. ground cinnamon
  • 4 large baking apples, tops sliced and insides hollowed
  • 2 tbsp. dried cranberries
  • 2 tbsp. chopped pecans
  • Stevia, optional
  Instructions:
  • Preheat oven to 400°. In a medium saucepan over medium-low heat, combine oatmeal and water and stir occasionally until creamy. Stir in ground cinnamon and stevia if desired, and let it cool slightly. Transfer apples to a glass baking dish and spoon in oatmeal. Bake until apples are soft and bubbly, about 35 minutes. Top oatmeal with cranberries and pecans. Serve and enjoy!
