-High in Antioxidants -High in Vitamin C & Vitamin K -They're still in season -7g fiber -Total Carb = 16g (7 of that is fiber!) -Total Fat = 10g (from avocado)
We typically recommend cooked vegetables because they're more easily digested, but we recommend raw vegetables when you're looking for natural sources of Vitamin C and Antioxidants (which are compromised when cooked while there are other benefits) Here's an EASY recipe for a side dish to enjoy BEFORE these ingredients go out of season this fall!
