Switch up your boring, over-used quinoa recipes, and test out this Coconut Lime Quinoa! It makes about 2 servings (1 cup cooked quinoa per starch serving if your cleansing). You can store it in an airtight container in the fridge for up to 2-3 days.   • 1 cup quinoa, rinsed if necessary
  • 2 cups unsweetened coconut milk (OR 1 small can of unsweetened coconut milk & ¼ cup water)
  • 1/4 teaspoon salt
  • 1 small lime, zested and juiced
  Instructions:
  • Check the quinoa package to see if your quinoa needs to be rinsed. If it does, pour 1 cup of quinoa into a fine mesh strainer and rinse thoroughly with cold water. Place quinoa, coconut milk (OR canned coconut milk and water), and salt into a medium sized saucepan. Bring the mixture to a boil, cover with a lid, and simmer on low for 15 minutes (or however long your package says). Let the quinoa set for about 4-5 minutes after it's done cooking. Stir in the lime zest and juice to taste, and if needed adjust the salt as desired, and serve!
