Summer time = the beach, bikinis, beer and more of our favorite summer time "b's". Avoid the "b" that comes along with the drinks and summer food, BLOAT, with this yummy, fresh salad. It's absolutely delicious and we promise everyone will enjoy it! Our apple pecan rosemary chicken salad is great for warm summer nights. Plus, if you are doing the cleanse, this recipe counts as 1 Protein + 1 Fruit + 1 Fat. SCORE!!
Ingredients:
1/2 cup plain Daiya yogurt
2 tbsp mayonnaise (olive oil based)
1 tbsp red wine vinegar
2 1/2 tsp rosemary, finely chopped
1 tsp digon mustard
1/2 tsp stevia
1/2 tsp onion powder
Salt and pepper, to taste
1 lb boneless chicken breasts, chopped into small cubes
1 1/4 cup apples, chopped
1/3 cup pecans, chopped
1/3 cup dried cranberries, chopped
Directions:
1. Add chicken, apples, pecans and cranberries to a large mixing bowl.
2. In a separate small mixing bowl mix together yogurt, mayonnaise, red wine vinegar, rosemary, mustard, and onion powder. Season with salt and pepper to taste.
3. Pour over chicken mixture then toss to evenly coat. Serve in a lettuce wrap!
