If you’re on the cleanse and struggling to find the right meals to eat, this turkey meatball recipe is perfect for you! It cooks about 4 servings and each serving of just meatballs count as one protein. Add in some of the eggplant noodles from the other day’s blog and you have a delicious dinner. (1 protein + 2 cups of veggies). Add a sweet potato on the side and you have protein + veggie + starch! Boom, it’s that easy!!! Also, don't forget that tomato sauce is a freebie!  Turkey Meatballs Ingredients:
  • 1 pound ground turkey/chicken
  • 1 egg
  • 3 tablespoons chia seeds
  • Oregano (dried)
  • Onions, minced garlic
  • 11 tomatoes (dice 3, puree 8)
  • Spices: basil, garlic, fennel pepper, etc
  Directions:
  1. Add diced tomatoes to a pan, with spices and simmer for 1 hour
  2. Combine ground turkey/chicken with egg, chia seeds, dried oregano, onions and minced garlic
  3. Roll into golf ball size meatballs
  4. Spray baking pan with olive oil and bake on 375 degrees for 15mins
  5. Add to sauce and cook in sauce. Enjoy
