Whip up this zoodle recipe in 30 minutes any day of the week! The sauce is made directly in the blender and is super easy to make! Grill or sauté some chicken and top a plate of spiralized zucchini noodles, and you will be extremely satisfied with your dinner creation!

Ingredients: For Sauce:
  • ¼ cup chopped scallions (use mostly green part)
  • 2 tbsp apple cider vinegar
  • 1 and ½ tsp tamari
  • 2 tsp fresh lemon juice
  • ½ tsp ground ginger
  • ¼ cup extra virgin olive oil
  • 1 med avocado, halved (one half blended, one half stirred in)
  For the Chicken:
  • 4 chicken breasts
  • Pinch of crushed red pepper on each
  • ½ tsp ground mustard
  • Salt and pepper
  For the Zucchini Pasta:
  • 3 medium zucchini, peeled and spiralized
  • Pinch of salt
  • Extra thinly sliced scallions for garnish
  Instructions:
  • Start by spiralizing your zucchini and set it aside in a bowl that is lined with paper towels to absorb water. Next, start to cook the chicken. Heat a large grill pan (or an actual grill) over med-hi heat and brush with olive oil. Sprinkle the chicken with the sea salt, crushed red pepper and ground mustard, then cook 3-4 minutes per side or until totally cooked through, then remove from pan or grill and set aside. To prepare the sauce, add all the sauce ingredients and only one half the avocado to a blender or food processor and process on high speed about 30-45 seconds or until fully combined. Cut up the the other half of avocado into small cubes and stir the chunks into the sauce. Next, cook the zoodles for 2-3 minutes over medium-high heat either in a pan lightly coated with olive oil. Place zoodles and a chicken breast on a plate and top with the sauce! Enjoy :)
