Every lunch or dinner needs a fresh side of fruits and veggies to pull the meal together, and this tomato avocado salad is perfect! It is delicious plain, with chicken, in a salad, on top of any lettuce cup recipe, and more. It is definitely a staple to have this in your house!

Ingredients:
  • 4 cups grape or cherry tomatoes, halved
  • 2 avocados, diced
  • 1 lime, juiced
  • ¼ cup of fresh cilantro, chopped (maybe a little less or none if you are not a fan)
  • 1-2 tbsp extra virgin olive oil
  • salt and pepper (about 1/2 tsp or more)
  • 1/2 red onion, diced
  Instructions:
  • Place tomatoes, avocados, and cilantro into a medium salad bowl. Add lime juice, olive oil, salt and pepper and mix well. Serve immediately.
