These Sweet Potato Waffle Breakfast Sandwiches are the perfect way to indulge in a healthy version of a carb and greased filled breakfast sandwich. I would consider them even better because the "bun" is a crisp hash brown waffle! Have fun with this recipe and add on the veggies or turkey bacon!

Ingredients:
  • 1 large egg (for sweet potato waffle)
  • 2 egg whites (for breakfast sandwich)
  • 1 small/medium sweet potato, grated and dried (1 cup shredded & packed)
  • ¼ tsp cumin
  • ⅛ tsp paprika
  • ⅛ tsp garlic powder
  • 2 tsp avocado oil
  • 1 cup spinach, chopped, cooked, drained and/or sauteed if desired
  • Optional ingredients: 2 turkey bacon slices (we recommend Applegate), 3-4 avocado slices, any additional veggies (tomato, mushroom, etc.)

  Instructions:
  • Heat waffle iron and grease well with some of the avocado oil. In a medium mixing bowl whisk 1 egg and add in grated sweet potato, 1 tsp oil and mix until combined well. (For best results, dry your grated sweet potatoes with either a paper towel or thin kitchen towel). Next, pack in your sweet potato mixture to your heated and greased well waffle iron. Press waffle iron down gently and cook the waffles for about 4-5 minutes, until golden. While the potato is cooking, you can begin to make your egg whites and spinach. When the waffle is cooked, gently use a butter knife to move it to a plate. Top one half with spinach, egg and any additional ingredients. Sprinkle some salt and pepper to taste, and enjoy!!!
