All I kept hearing about recently was this new idea of a sushi bowl. Though I have never actually tried one from a restaurant, I decided I needed to make one for myself and see how delicious they could be. It was the healthiest, simplest, and least expensive version of a sushi bowl, yet it was amazing. They are so fun and versatile. You can even jazz them up and make them more fancy as you see fit and as your budget allows. Some other ingredients that you can add: broccoli, cucumber, onion, mushroom, mango, asparagus, radish, and/or coconut. Gluten-free and dairy-free, this recipe is a must try!

  Bowl Ingredients:
  • 1 lb. chicken breast
  • 2 cups cooked brown rice
  • 1 carrot, thinly shaved
  • 4 green onions, thinly shaved
  • 1 cup frozen shelled edamame, thawed
  • Sesame seeds for garnish
  Teriyaki Sauce Ingredients:
  • 1/3 cup tamari (gluten-free soy sauce)
  • 2 tablespoons water
  • 1 tablespoon agave, melted
  • 1 tablespoon garlic (about 3-4 cloves), minced
  • 1 tablespoon ginger (about 2” ginger), grated or minced
  • 3 green onion (about ¼ cup), thinly sliced
  • 1 jar with lid
  Teriyaki Sauce Instructions:
  1. Pour tamari in a jar and add the water, melted honey, minced garlic, grated ginger, and half of the thinly sliced green onions (the other half will be used for garnish).
  2. Cover and shake for a minute until well combined. The sauce is ready to use as a marinade OR store in the refrigerator for up to a week.
  3. To marinate, take a medium bowl and pour the teriyaki sauce over the chicken, meat, fish, or veggies. Let it sit for 5-10 minutes.
  Bowl Instructions:
  1. Spray a grill pan with cooking spray and bring to medium high heat. Add the chicken breasts but don't crowd the pan. Cook the chicken for 5-7 minutes on each side. Remove from the pan, lightly tent with foil and rest for 3-5 minutes. Repeat with the other chicken breasts if needed.
  2. To prepare the bowls, spoon brown rice into the bottom of the bowl then layer with shredded carrot, shredded green onion and edamame. Slice or chop the chicken breasts and place on top then drizzle with a tablespoon of teriyaki sauce. Garnish with sesame seeds.
