With only a few weeks left in the summer, it's crunch time to get your fill of all the in-season fruits! This salad is so delicious and refreshing, it's a summer must! image Salad ingredients:
  • Grilled steak, sliced
  • Mixed greens
  • Pineapple, cut in chunks
  • Red pepper, sliced
  • Snow peas, sliced
  • Lemon zest
  • Ginger zest
  • Unsweetened coconut, shredded
  • Ginger dressing
  Ginger dressing ingredients:
  • 1/2 cup rice wine vinegar
  • 1/4 cup water
  • 1/4 cup chopped green onions
  • 1 tbsp agave (optional)
  • 2 tablespoons minced peeled fresh ginger
  • 2 tablespoons low-sodium soy sauce
  • 3 teaspoons canola oil
  Preparation: Assemble salad with all ingredients. For dressing, mix all ingredients together and top your salad off with a few tablespoons!
