Who doesn’t love egg salad? Well this is egg salad with a bit of a twist and you HAVE to try it! Go for it - skip the deli line and the fat with this great BLT egg white salad dip!

Ingredients:
  • 10 egg whites (hard boil then remove the yolk)
  • 3 tbsp mustard
  • ½ tsp fresh wasabi
  • 8 grape tomatoes (diced)
  • 1 stalk celery (diced)
  • 3 slices applegate turkey bacon
  • Salt and pepper to taste
  • Lettuce leaves for serving
  Directions: 
  1. Cook turkey bacon in pan, cut into small pieces, and set aside.
  2. Place hard boiled egg whites into a bowl (yolks removed) and mash together with mustard and wasabi.
  3. Add in diced grape tomatoes, bacon and celery and mix well.
  4. Garnish w/ tomatoes and turkey bacon bits
  5. Store in fridge until ready to eat.
  6. Serve in lettuce cups, over a salad, or with cut up veggies.
  ****If your plan allows for a starch, serve on a brown rice cake - and enjoy!
