With this Jerk Chicken meal prep recipe, in just about 30 minutes, you have 4 healthy, delicious meals ready to eat whenever you're hungry! Perfect for lunch at work or an easy meal to heat up when you get home. Make sure for the yellow rice that you buy a low-sodium kind, or make your own yellow rice at home. Also, for a cleanse-friendly option, replace the yellow rice with brown and/or the beans with a veggie! If you are not cleansing, feel free to try the yellow rice!

Ingredients:
  • 1.5 pounds chicken breast, cut into 1 inch pieces
  • 1 tablespoon Jamaican Jerk Seasoning
  • 2 cups diced pineapple
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 can black beans, drained and rinsed
  • 15 oz package yellow rice, cooked (low sodium!!)
  Instructions:
  • In a medium bowl, mix together pineapple, cilantro and red onion. Set aside. Sprinkle jerk seasoning over chicken and stir to coat.  Spray pan with non-stick cooking spray and add chicken. Cook over medium heat until cooked through. About 6-7 minutes. Spoon rice, black beans, chicken and pineapple salsa into 4 containers or serve in a bowl.
