You don't have to avoid a breakfast sandwich because of the carb overload. Instead, make the sandwich yourself using an egg "bun" and you will be able to enjoy the same flavors minus the guilt. Note - if you are cleansing you will have to use uncured turkey bacon instead of the sausage because of the high fat content in sausage.

Ingredients:
  • 2 tablespoons olive oil, divided (plus more for greasing the biscuit cutters)
  • 2-3 strips of turkey bacon or ¼ pound raw turkey breakfast sausage
  • 2 large eggs
  • Salt
  • Freshly ground black pepper
  • ¼ cup water
  • 1 heaping tablespoon guacamole, veggies, pico de gallo, salsa, etc. (optional)
  Instructions: Cook the turkey bacon strips or the sausage patty (whichever you prefer) My fellow cleansers, you are going to have to avoid the sausage option and enjoy just the turkey bacon. Using two - 3½ inch biscuit cutters, place them on the greased skillet, and pour in the two eggs. Season with salt and pepper. Fill the outside edge with the ¼ cup water and cover (this will make sure the whole egg is cooked around).  Once those are cooked you can assemble your “sandwich” with the guac/veggies you please. Enjoy!
