One of my all time favorite salads is a cobb salad. The bacon, eggs, avocado, and crisp romaine are the absolute best combination. This cobb salad lettuce wrap has a bit of a twist to trick your mind into thinking you're eating a gluten-filled wrap of greatness.

Ingredients:
  • balsamic vinaigrette
  • 1/8 teaspoon black pepper
  • 2-3 slices turkey bacon
  • 2 hard boiled egg whites
  • 1 head iceberg lettuce, outer leaves removed and discarded
  • 1 grilled chicken breast, sliced
  • 1 large beefsteak tomato, cored and cubed
  • 1/2 large peeled avocado, pitted and cubed
  • 1/2 small red onion, finely diced
  Ingredients:
  •  Heat a large nonstick skillet over medium-high heat; cook turkey bacon until crisp (5-6 minutes). Remove from skillet. Carefully separate 8 large leaves from lettuce head (do not tear) to use as wraps; reserve remaining lettuce for another use. Place 1 lettuce leaf inside another to create 4 (2-layered) wraps; fill with slices of chicken breast, 1/4 of the cubed tomato, few cubes of avocado, and 2 tablespoons diced onion. Drizzle with 1 tablespoon balsamic dressing; top with 1/4 of the crisped turkey bacon and hard boiled egg whites.
