Chicken Enchilada Bowl
Who doesn't love homemade bowl recipes? This one is sure to please and with our homemade enchilada sauce, it saves your body from a sodium overload!
Bowl Ingredients:
Cilantro Lime Brown Rice:
- 1-2 cups cooked brown rice
- 1 1/2 teaspoons kosher salt
- 1 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Juice of a lime
- 2 tablespoons cilantro, chopped
- 4 boneless skinless chicken breasts
- 2 teaspoons chili powder
- 1 cup homemade enchilada sauce
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon salt
- ¼ teaspoon oregano
- 1 (15-ounce) can tomato sauce
- 1 cup chicken stock
- Heat oil in a medium saucepan over medium-high heat. Add diced onion and cook until just browned, about 5 minutes. Stir in garlic, chili powder, cumin, salt and oregano and cook for about 30 seconds, stirring constantly. Sautéing your spices for a few seconds will give your sauce a fuller flavor.
- Add in the tomato sauce and chicken stock. Bring mixture to a simmer and cook for approximately 8 to 10 minutes, stirring occasionally.
- Remove from heat, and strain mixture through a fine mesh strainer, pressing on the onion to extract the sauce.
- Keep refrigerated for up to one week. Makes approximately 2 cups.
- Black beans, tomatoes, black olives, cilantro, corn
- Add the chicken, chili powder, and red enchilada sauce to a slow cooker.
- Cover with the lid and set to low, cooking until the chicken is cooked through and tender (about 4-6 hours depending on your slow cooker). Once the chicken is done, shred with two forks and toss in the sauce.
- Pour the rice into hot skillet and add in the salt, chili powder, and garlic powder.
- Let the rice sauté in the pan for about 4 minutes stirring it occasionally. Squeeze in the lime juice and stir in the chopped cilantro cooking for another minute.
- Scoop some of the brown rice into the bottom of a bowl.
- Top the rice with the shredded chicken, black beans, grilled corn, tomatoes, olives, cilantro, and any other toppings you like.
