Everyone wants an alternative to a nice, juicy burger. Well this burger stuffed pepper is just that - a less fat, dairy free, and healthy version of an American favorite.

Ingredients:
  • 1lb lean ground turkey
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup shredded Daiya cheddar cheese
  • 1.5 cups cooked brown rice
  • 1 cup no-sodium beef stock, divided
  • ¼ cup tomato sauce
  • 4 bell peppers
  Instructions: Preheat oven to 400 degrees In a large skillet, over medium heat, cook the ground turkey till just a little pink, about 5-7 minutes. Season the turkey with salt and pepper then break up into small pieces as it cooks. Stir in worcestershire sauce, mustard, onion powder, granulated garlic, ¾ cup of shredded cheese, rice, ¼ cup of the stock, and tomato sauce. Stir until all ingredients are combined and heated through. Remove from heat and set aside. Cut 4 bell peppers in half and clean out seeds and membranes. Stuff each bell pepper with ground turkey mixture, top the peppers with the remaining cheese, and line up in a casserole dish. Pour the rest of the beef broth into the bottom of the casserole dish. Cover tightly with foil and bake for 40 minutes or until cooked. Serve and enjoy!
