This is definitely a breakfast with a twist.... Baked Sweet Potato with Almond Butter and Banana Slices! It is the perfect meal to start your day with loads of energy. If you are cleansing, be sure to serve with the amount you are recommended (1/2 sweet potato & choose one of the "fat" options; chia or peanut butter)

Servings: 1 Ingredients:
  • 1 sweet potato, washed
  • 1 tbsp almond or peanut butter
  • 1 banana, sliced
  • 1 tsp chia seeds (optional)
  • Cinnamon
  • Salt, if needed
  Directions:
  • Preheat oven to 375 degrees F. Use a fork to poke several holes in the sweet potatoes and place on baking sheet. Roast sweet potatoes for about 45 minutes (check to make sure they are fork tender, they may need another 15 minutes). Remove from oven and cool for 5-10 minutes. To serve, cut the sweet potatoes open and add a pinch of sea salt, if you desire. Top with 1 tablespoon of almond butter, sliced banana, and if you’d like chia, add 1 teaspoon of chia. Sprinkle a pinch of cinnamon in each sweet potato and serve. Enjoy :)
