My roommate's mom shared this recipe with us a few days ago and after making it, we can not get enough of it! Tomatoes, corn, beans, cilantro, and healthy ranch mix... YUM! It is insanely delicious, plus it's healthy and pairs well with literally everything. We used 2 tbsp of the Ranch mix recipe posted below in order to avoid using the store-bought mix. Believe me, you will not be disappointed with this salsa recipe! blackbeanandcornsalsa Ingredients:
  • 3-4 tomatoes, diced
  • 1 package frozen corn kernels, cooked, cooled, and drained
  • 2 cans black beans, rinsed and drained
  • 1 small red onion, finely chopped
  • 1/2 cup red wine vinegar
  • 1/8 cup olive oil
  • 2 tbsp fresh cilantro
  • *2 tbsp of our Ranch mix
  Ranch mix:
  • ¼ cup dried parsley
  • 1 Tbsp dried dill
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • ½ tsp dried basil
  • 1 tsp salt
  • ½ tsp pepper
  • ** Mix ingredients together. Store extra in airtight jar.
  Instructions: Combine all ingredients in a medium mixing bowl and stir. Pair with just a protein (chicken, steak, eggs, fish) or on top on a salad! Store leftover in a refrigerator for 5-7 days.
