It is the day after Thanksgiving, and your fridge is STUFFED with all the leftovers of yesterday. Now, you can either eat it the usual/normal way or you can make this delicious stuffed sweet potato that combines all the delicious flavor together, but also offers you a way to control your portion size ;).

Ingredients:
2 small sweet potatoes, baked
3-4 slices leftover turkey
¼ cup cranberry sauce
handful of fresh spinach
gravy
chopped parsley
Other toppings options: green bean casserole, gravy, stuffing, chickpeas...
Instructions:
Cut a slit lengthwise through the middle of the sweet potato. Gently press in on both ends to allow room for toppings. Divide leftovers among the 2 potatoes, splitting evenly. Drizzle with gravy. Enjoy!
