Everyone enjoys new, fun ways to enjoy meatballs. Right? I can't be the only one that is obsessed. You can make meatballs in so many different ways with so many different flavors and ethnic inspiration that everyone can enjoy them! Well, I guess vegetarians wouldn't be too fond of a meatball.... but there are veggie meatball recipes which I would be happy to share with you for those who are vegetarian. This thai almond butter turkey meatball recipe is pretty simple, using most ingredients that most of you probably have in your kitchen cabinets and a few additional fresh items that you would have to purchase for not too much money! WIN, win.

  Ingredients (meatballs):
  • 1 pound ground turkey breast
  • garlic powder
  • onion powder
  • ginger
  Ingredients (Thai almond butter sauce):
  • 3/4 cup coconut milk
  • 1/2 cup almond butter
  • 2 tbsp. red curry paste
  • 1 tbsp. coconut vinegar
  • 1 tbsp. coconut aminos
  • 1/8 tsp liquid stevia (optional)
  • squeeze fresh lime juice
  • Optional Sides: cauliflower rice, carrots, almonds, cilantro
  Instructions:
  • Preheat oven to 425 degrees F. Mix together all Thai Almond Butter sauce ingredients. Place 1/4 cup sauce in the bottom of a cast iron skillet. Mix together all ingredients for meatballs and roll into desired size meatballs (do not overmix or the meatballs will become dense). Place meatballs into cast iron skillet. Top with remaining sauce. Bake for ~12 minutes. Serve over brown rice with shredded carrots, chopped almonds and broccoli.
