Orange beef and broccoli stir-fry
Who doesn’t love quick and easy meals for weeknights? This orange beef and broccoli stir-fry is so healthy and so easy to make. Whip it together, add some brown rice, and bam… a delicious dinner for all to enjoy!

Ingredients:
photo credit: pinch of yum- 1/4 cup low-sodium beef broth or water
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon vegetable oil
- 1 lb London broil, cut into strips
- 1 head of broccoli
- 1 tablespoon grated orange zest
- 1/4 cup freshly squeezed orange juice
- Salt and pepper

- Whisk together broth, soy sauce, and lemon juice in a bowl; set aside.
- Warm oil in a large skillet over medium-high heat until hot. Add beef, turn heat to high and cook, stirring constantly, until no longer pink, 2 to 3 minutes.
- Add broccoli and cook, stirring, until warmed through, about 2 minutes.
- Stir in reserved sauce, orange zest and juice. Cook, stirring constantly, until sauce is thickened, about 2 minutes. Season with salt and pepper.
- Cook brown rice and add to dish when ready to serve.
