Ingredients: 2 limes, juiced ¼ cup fresh parsley, chopped 2 tablespoons olive oil 2 tablespoons water 1 tablespoon minced garlic 1½ teaspoons red chilli flakes 1 teaspoon ground Cumin 1½ teaspoons salt 1 tablespoon honey 4 salmon fillets 1 red bell pepper, chopped 1 green bell pepper, chopped 1 yellow bell pepper, chopped 1 onion, cut into wedges Instructions: Preheat oven on broil settings on high heat. Spray a baking sheet tray with cooking oil spray; set aside. Whisk lime juice, olive oil, water, garlic, chilli flakes, cumin, salt and parsley together to combine. Add the honey and whisk again. Arrange the salmon fillets on the prepared baking tray. In a large mixing bowl, pour some of the marinade on top of the veggies and toss to coat; arrange them on the baking sheet around the salmon filets. Brush the marinade on the filets and place in the oven. Broil until the peppers are just beginning to char at the edges (about 10 minutes - if you would like them more crisp, remove the salmon filets when cooked and continue broiling the veggies) and the salmon is cooked to your liking (about 10 minutes). Remove from the oven and serve immediately with lime wedges and extra marinade for added flavor.
