No Bake Chocolate Peanut Butter Cookies Recipe
Treat yourself this Easter weekend with this delicious No Bake Chocolate Peanut Butter Cookies. This recipe makes about 12-14 cookies so depending on your holiday party attendees adjust so everyone can enjoy! :)

Ingredients:

- ¼ cup honey
- ¼ cup coconut oil (measured in solid state)
- 2 tbsp unsweetened cocoa powder
- ¼ tsp sea salt
- 1 tsp vanilla
- 1 cup quick cooking oats
- ¼ cup unsweetened coconut, shredded
- Prepare a baking sheet with wax paper and set aside. In a saucepan, combine the peanut butter, honey, salt and coconut oil and heat until melted. Mixing well, add in the vanilla and cocoa powder. Next, add in the quick oats, mixing well. Add the shredded coconut and stir until completely combined. To prepare the cookies, place 1 tbsp portions of mixture onto your prepared baking sheet. Use a spoon and push the bottom of it down into each cookie, this will create a nest looking cookie. Let the cookies cool in the refrigerator (or freezer if crunched with time) until hardened. Top with your favorite candy eggs and serve on decorative platter. Keep leftover cookies in an airtight container in the fridge for up to a week.
