Eating healthy around the holidays can be difficult. So, here is a little delicious tip for a great vegetable side dish! Roasted Veggies :)

Serves 4 Ingredients:
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 white onion, thinly sliced
  • 2 portobello mushrooms, thinly sliced
  • 3 tbsp. olive oil
  • 1 tsp. balsamic vinegar
  • Sea salt and freshly ground pepper, to taste
  Directions:
  • Preheat oven to 450 degrees. Toss vegetables, balsamic, and olive oil in large bowl. Sprinkle with sea salt and pepper; toss to coat. Transfer mixture in single layer to a baking sheet. Roast for 25 to 30 minutes or until vegetables are tender, stirring occasionally. Serve warm.
