Low Fat Chocolate Zucchini Bread made with no added sugar or oil. A lighter and healthier zucchini bread that's incredibly addicting and guaranteed delicious! *To save time, pulse quarter chunks of zucchini in a blender or food processor. It's a huge time saver, and no wringing out the dampness is required either!

Ingredients:
  • 1 large zucchini, shredded*
  • 2 egg whites
  • ½ cup unsweetened applesauce
  • 1 tsp almond extract
  • 1½ cups gluten-free almond flour **
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ cup dairy-free mini chocolate chips
  Instructions:
  1. Preheat oven to 350 F. Prepare an 8x8 loaf baking pan with parchment paper allowing the sides to hang over the edges of the pan for easy bread removal.
  2. In a large bowl, whisk together eggs, applesauce, honey, salt and almond extract.
  3. In a separate bowl, sift together the flour, baking soda, baking powder and cinnamon.
  4. Very slowly fold in the flour mixture into the liquid mixture. Do not over mix.
  5. Next fold in the zucchini and chocolate chips into the batter.
  6. Transfer to the prepared loaf pan.
  7. Bake 50 minutes or until a toothpick removes clean from the center.
  8. Remove from the oven and cool 1 hour in the pan before removing/slicing.
