Chocolate Zucchini Bread Recipe
Low Fat Chocolate Zucchini Bread made with no added sugar or oil. A lighter and healthier zucchini bread that's incredibly addicting and guaranteed delicious! *To save time, pulse quarter chunks of zucchini in a blender or food processor. It's a huge time saver, and no wringing out the dampness is required either!

Ingredients:

- 2 egg whites
- ½ cup unsweetened applesauce
- 1 tsp almond extract
- 1½ cups gluten-free almond flour **
- ½ tsp salt
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ cup dairy-free mini chocolate chips
- Preheat oven to 350 F. Prepare an 8x8 loaf baking pan with parchment paper allowing the sides to hang over the edges of the pan for easy bread removal.
- In a large bowl, whisk together eggs, applesauce, honey, salt and almond extract.
- In a separate bowl, sift together the flour, baking soda, baking powder and cinnamon.
- Very slowly fold in the flour mixture into the liquid mixture. Do not over mix.
- Next fold in the zucchini and chocolate chips into the batter.
- Transfer to the prepared loaf pan.
- Bake 50 minutes or until a toothpick removes clean from the center.
- Remove from the oven and cool 1 hour in the pan before removing/slicing.
