Chicken and Broccolini w/ Dijon Mustard Sauce Recipe
This chicken and broccolini recipe is the perfect meal to make for your family tonight. Serve this recipe over some brown rice or with a salad and you have a full meal that everyone will love. You can also save the extras in Ziploc containers to work lunches or for dinner the next night!

Ingredients:

- salt and pepper to taste
- 3 tablespoons olive oil, divided
- 1 lb. broccolini, trimmed and sliced in half lengthwise, soften just a bit
- 3 tablespoons olive oil
- 1 large shallot (or 2 regular), diced
- 2 cups chicken broth, low sodium
- 4 sprigs fresh thyme, plus more to garnish (optional)
- 2 tbsp. Dijon mustard
- Preheat your oven to 170 degrees F. Sprinkle both sides of chicken breasts with salt and pepper. In a large frying pan, heat 2 tbsp. olive oil over medium-high heat. Add in the chicken - do in batches if it seems like you are going to crowd the pan. Sear for about 4 minutes per side or until cooked through. Transfer the chicken to a sheet pan and place in the oven to keep warm. Next, bring a medium pot of water to a boil over high heat (add about 2 tablespoons of salt to the water before boiling to season). When the water is boiling, add your trimmed and halved broccolini all at once, cover with a lid, and set a timer for 2 minutes. Remove from heat, and drain the water from the broccolini. In a frying pan, add a tablespoon of oil to the hot pan over medium high heat. Transfer the broccolini to the pan. Saute for 1 minute, then remove and place on the pan with the chicken in the oven. Add the shallots to the hot pan over medium high heat. (add a bit more oil if necessary) Saute for 2-3 minutes until soft. Stir in the chicken broth and thyme sprigs. Bring to a boil and then simmer for 3 minutes. Stir in the mustard and simmer for 5-6 minutes.. Remove from heat and discard the thyme stems. Now, you can either add the warm chicken and broccolini to the pan or serve on a platter with the sauce over the top. I recommend placing the chicken and broccolini in with the sauce to add some extra flavor and juice to the chicken.
