Sometimes I go to bed thinking about what I'm going to eat for breakfast the next day. Yeah, it may be a little strange but I can guarantee you're going to think the same with these gluten-free, dairy-free, extremely delicious, carrot cake overnight oats. image Ingredients:
  • 3/4 cup Unsweetened almond milk
  • 1/2 cup Plain Daiya yogurt (or mashed banana or applesauce)
  • 1/2 cup Grated carrots (one large carrot)
  • 1/4 tsp Salt (or to taste)
  • 1/2 tsp Cinnamon
  • 1/2 tsp Apple pie spice
  • 2 tbs stevia
  • 1 cup Old fashioned oats
  • 1/4 cup Vanilla Essential Base powder (or additional oats)
  Instructions: In a small bowl, mix all of the ingredients together. Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour so the oats soften and absorb the liquid). Top with chopped nuts, cinnamon, or vanilla Daiya yogurt if desired! Enjoy cold, or microwave for 30-60 seconds to enjoy warm!
