Watermelon & Grilled Chicken Recipe
Watermelon pairs quite nicely with grilled chicken, even if you didn't think it would! Especially in Summer, this watermelon grilled chicken is both super fresh and healthy. It's all made on the grill so it's simple too! Pair this with a nice arugula salad with extra watermelon cubes and balsamic vinegar.

Ingredients:
1 lb. boneless skinless chicken breasts
1 tsp. salt
½ tsp. pepper
8 1" wedges watermelon
6 leaves fresh mint, finely diced
¼ c. balsamic vinegar
Instructions:
Heat your grill to medium. Season the chicken breasts with salt and pepper and cook for 6-8 minutes or until they are no longer pink in the center. Add the wedges of watermelon to the grill and cook 1-2 minutes on each side, or until grill marks are evident. Remove the chicken and watermelon from the grill and allow the chicken to rest for 5 minutes so the juices set. Meanwhile, cube the watermelon pieces. Top the chicken with watermelon, mint and balsamic vinegar. Serve immediately and enjoy!
