Roasted Sweet Potato Cups with Guacamole Recipe
Whip up these Roasted Sweet Potato Cups in less than 45 minutes! Perfect for a quick snack or a light lunch. This recipe only uses 6 sweet potatoes, making 12 potato cups. Store in an airtight container in the refrigerator for a few days!

- ½ teaspoon olive oil
- ½ teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- Your favorite guacamole recipe
- Optional: radish sticks and cilantro
- Preheat the oven to 400 degrees F. Cut each potato in half and using a spoon, scoop out the inside of the potato leaving about ¼ inch border. Put potatoes on a baking sheet and drizzle with olive oil and season with spices and put in the oven for about 40 minutes, flipping once, until potatoes are fork tender. Let cool for a few minutes. When potatoes are crisp, take them out and let cool for a few minutes. Scoop a small spoonful of guacamole mixture into each potato slice. Garnish with radish matchsticks and/or cilantro leaves, if desired.
