There is nothing better than meals that are cooked all in one pan. This Tuscan Pork Chop Recipe is not only an easy clean-up, but also flavor packed and super simple to make! This recipe makes 4 servings and takes a total of 20 minutes to prepare! Keep in mind, pork chops aren't recommended for cleansing days, however, you can definitely enjoy this during your maintenance days. Just make sure all fat is trimmed!

Ingredients:
  • 4 pork chops, fat trimmed
  • 1 tbsp olive oil
  • 5 cloves of garlic, minced
  • 12 ounce can diced tomatoes
  • 1 large onion, diced
  • 2 tsp oregano
  • 1 tsp sage
  • 1 tsp basil
  • 6 sprigs thyme
  Instructions:
  • Heat a large pan on high and add the oil. Let that heat up, and then add in the pork chops. Brown each side of the pork chops (about 1 minute each for boneless chops & 5 minutes if they are bone-in). Reduce the heat to medium and add in the onions. Stir around to mix the flavors. After 2 minutes, flip the pork chops and cook for another 2 minutes on the other side. Next, add in the tomatoes, garlic and spices. Simmer until tomatoes are soft - about 5-8 minutes. Serve on a bed of zucchini noodles or brown rice and enjoy!
