This Cajun cauliflower recipe is so simple to make and really makes such a difference when cooking your vegetables since we all know veggies can get a little boring when you cook them the same way every single time. A simple way to mix it up, is to use spices and herbs to add some flavor!

  Ingredients: 1 cauliflower, hard stem removed and chopped into bite-sized pieces 1 tbsp olive oil 1½ tsp cajun seasoning 1 tsp dried thyme sea salt and pepper Instructions: Preheat your oven to 395F. Line a baking tray with parchment paper and put the chopped cauliflower on it. Drizzle the olive oil over the cauliflower and toss to mix. Sprinkle with the cajun seasoning, dried thyme, salt and pepper and mix again to coat everything. Roast for 30 minutes tossing once about halfway through. Serve with a protein or on top of a salad!
