BLT Cups Recipe
BLT's are pretty amazing, am I right? Too bad that they are filled with grease and unhealthy carbs & fats. However, with a few tweaks, you can make an average BLT into a healthy lunch or snack! YUM. *note that 3-4 pieces of turkey bacon are used per cup.

Ingredients:

- ⅓ cup Daiya yogurt (dairy-free yogurt)
- 2 tsp. lemon juice
- 2 cups halved cherry tomatoes
- ⅓ head of romaine lettuce, chopped
- 1 avocado, chopped
- 2 tbsp. chopped chives, plus more for garnish
- Salt, to taste
- Freshly ground black pepper, to taste
- Preheat oven to 400°. Spray the muffin tin lightly with cooking spray. Lay 2 slices into the muffin tin cup across the bottom, and two more slices around the edges. You can attempt to weave the bacon if you’d like. Repeat to make as many cups as you’d light. Bake until crispy, about 20 minutes. Let cool for at least 15 minutes. Now, make the dressing: In a medium bowl, whisk together Daiya yogurt, lemon juice and chives and season with salt and pepper. Add tomatoes and lettuce and toss to coat. Remove bacon cups from muffin tin and fill with dressed lettuce and tomatoes. Garnish with more chives and serve. You can also add in the lettuce and tomato and top with a little bit of dressing, if you want it to be a little dryer. ENJOY!
