15 Minute Cashew Zoodle Recipe
This delicious Garlic Lime Cashew Zoodle recipe is done in just 15 minutes! It is extremely simple and so yummy. Add in some protein, and cook some chicken or steak and toss it in with the sauce and zoodles for a well balanced meal :)

Zoodle Ingredients:

- 2 large carrots, peeled
- 1/2 cup cashews, whole or chopped
- 1 tablespoon fresh cilantro, chopped
- 2 tablespoons peanut butter
- 1/2 tablespoon gluten-free hoisin sauce
- 1/2 tablespoon sriracha sauce
- 1 teaspoon tamari soy sauce
- Juice of 1/2 lime
- 2 cloves garlic, minced
- Using a spiralizer, spiralize the carrots on the thinnest setting and the zucchini on the medium setting. Set aside. Add the peanut butter, hoisin sauce, sriracha sauce, soy sauce, lime juice, and garlic to a skillet on medium-high heat. Stirring constantly, cook it for about 2 minutes. Add the cashews, zucchini, and carrots. Toss the ingredients gently to mix every 20 seconds for about 4-5 minutes until everything is heated through. Add the cilantro in and toss. Serve immediately and enjoy!
