These walnut crusted turkey cutlets are the absolute best cure when you're craving some comfort food! Juicy turkey cutlets covered in a crisp walnut and coconut outside. You can even switch out the turkey for chicken, and you basically have yourself a healthy version of fried chicken. We recommend pairing this with some sweet potatoes, either a sweet potato fry and or a sweet potato mash, and some broccoli or spinach. :) enjoy.

Ingredients:
  • 5-6 turkey or chicken cutlets, pounded thinner if necessary
  • 2 cups walnuts
  • ⅓ cup unsweetened shredded coconut
  • ¾ tsp  sea salt
  • ¼ tsp black pepper
  • ¾ tsp smoked paprika
  • 2 large eggs
  • Finely chopped parsley for garnish
  Instructions:
  • Preheat your oven to 400 degrees and line a large baking sheet with parchment paper. Pulse or blender the walnuts, coconut, sea salt pepper and paprika in a food processor or blender several times until you get a crumbly mixture and transfer this it to a large shallow dish. In a separate bowl, whisk the eggs. Coat each cutlet with the egg mixture, making sure to remove extra by gently shaking off excess, then coat on both sides with the walnut mixture. Place the cutlet in the baking sheet, and repeat for all cutlets. Bake in the middle rack of the preheated oven for 8-10 minutes, then carefully flip each one, and continue to bake another 8-10 minutes. Serve with your favorite sides!
