Roasted Garlic Chicken Salad
Switch up the classic lettuce wraps with these Roasted Garlic Chicken Salad in a pepper "boat." Don't get me wrong, lettuce wraps make the cleanse world go 'round, but these pepper boats are the perfect trade-in when they get old or too messy for one's liking.

Ingredients:
Photo Credit: Little bits of- 3-4 cooked & chopped chicken breasts (bake at 350 for 18 minutes with salt and pepper on both sides)
- 4 tablespoons homemade mayo (use our mayo recipe on our ‘recipe’ tab under the 'condiments' section)
- 1/4 cup chopped parsley
- 1/4 cup finely chopped red onion
- 1/2 cup shredded carrots
- 1/2 cup roasted red peppers
- Juice of 1/2 a lemon
- 1 tablespoon roasted garlic
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 teaspoons garlic powder
- 1/2 teaspoon smoked paprika
- Combine all ingredients in a bowl and stir until combined! Stir in lettuce wraps or bell pepper beds for a crunchy, cleaner alternative.
