Who doesn't love a delicious meatloaf recipe! This Mexican Meatloaf is low-carb, gluten-free and super easy to make.  
Mexican meatloaf pc: your lighter side
  Ingredients:
  • 2 lbs ground turkey
  • 1 egg
  • 1 cup chunky salsa
  • 1 package Simply Organic taco seasoning
  • toppings: lettuce, guac, tomatoes, yogurt, black olives
  Instructions:
  • Preheat oven to 350 degrees F. Mix all egg, turkey, seasoning, ½ container of salsa (about 1 cup) until combined. Press the meat mixture in a standard bread pan. Bake for an hour or until meat begins to shrink from pan sides. Carefully pour out any excess liquids that might be bubbling around the edges of the dish. Let rest 10 minutes and serve. Serve with guacamole, shredded lettuce, chopped tomatoes, black olives, and even dairy-free yogurt as a sour cream alternative.
