My roommate's mom shared this recipe with me about a year ago, I can not get enough of it! Tomatoes, corn, beans, cilantro, and healthy ranch mix... YUM! It is insanely delicious, plus it's healthy and pairs well with literally everything. I use 2 tbsp of the Ranch mix recipe posted below in order to avoid using the store-bought mix. Believe me, you will not be disappointed with this salsa recipe!

  Ingredients:
  • 3-4 tomatoes, diced
  • 1 package frozen corn kernels, cooked, cooled, and drained
  • 2 cans black beans, rinsed and drained
  • 1 small red onion, finely chopped
  • 1/2 cup red wine vinegar
  • 1/8 cup olive oil
  • 2 tbsp fresh cilantro
  • *2 tbsp of our Ranch mix
  Ranch mix:
  • ¼ cup dried parsley
  • 1 Tbsp dried dill
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • ½ tsp dried basil
  • 1 tsp salt
  • ½ tsp pepper
  • ** Mix ingredients together. Store extra in airtight jar.
  Instructions:
  • Combine all ingredients in a medium mixing bowl and stir. Pair with just a protein (chicken, steak, eggs, fish) or on top on a salad! Store leftover in a refrigerator for 5-7 days.
