I had this Chickpea salad from Costco just the other day at a July 4th barbecue and it was game changing SO GOOD. After looking at the ingredients, I wanted to make a healthier version so I whipped this together and it's basically the same dip just that much healthier.

  Ingredients: 1/2 large yellow bell pepper 1/2 medium sweet onion 3 green onions, green part only 2 (15 oz) cans chickpeas, drained and rinsed 1/4 cup extra-virgin olive oil 1/4 cup fresh squeezed orange juice 2 tablespoons fresh lime juice 2 tablespoons white or red wine vinegar 1/4 teaspoon salt Optional ½ cilantro, chopped   Instructions: In your food processor or by hand, pulse the pepper, sweet onion, and green onion until they are well chopped. In a bowl, mix the vegetables and chickpeas and in another smaller bowl whisk together the olive oil, orange juice, lime juice, vinegar, and salt. Pour over the chickpeas and vegetables and mix. Store in fridge to get a little chill before serving and enjoy!
