Breakfast is the most important meal of the day, but a lot of us (cough cough, 100% me) don’t have time to cook breakfast daily before leaving for work. This strawberry-banana pancake recipe is not only just 4 ingredients (2 of them being the optional toppings) but it’s delicious, soooo simple, and healthy!!! One serving = 1 banana + 1 egg - adjust according to how many meals you would like to prepare.

Ingredients per 1 serving:
  • 1 banana
  • 1 egg
  • Strawberries (as many as you would like)
  • Nut butter (almond or peanut)
  Instructions:
  • Mash bananas and add the egg and whisk together. Scoop a spoonful onto a heated skillet and wait until browned on the bottom and flip. Use your judgement for when they are cooked, they do cook pretty quick. Warm up some nut butter and cut some strawberries and top the pancakes with them! Store them in airtight container for meal prepping or just storing for later consumption :) - you can also place the fresh strawberries in your pancake batter so that they are cooked within the pancakes!
