Who doesn't enjoy a delicious sloppy joe from time to time. Well, now you don't have to wait until cheat day! You can enjoy this dinner whenever you want with a little healthy twist. Switch out the carbs for a healthy starch option, zucchini noodles. You can use any veggie you like, I always prefer spaghetti squash, but some enjoy this with a sweet potato or plain!

Ingredients:
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 large onion, diced
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 pound ground turkey
  • ¾ cup homemade ketchup (see note below)
  • ¼ cup coconut aminos
  • 2 tablespoons tomato paste
  Instructions:
  • Place the olive oil in a large skillet. Dice up the red pepper and onion and sauté in the olive oil over medium heat. Cook for about 5 minutes, until they start to soften and onions start to become translucent. Sprinkle with salt and garlic powder and stir in. Add the turkey and break it up with a spatula. Cook until browned. Add healthy ketchup, coconut aminos, and tomato paste and stir to combine. Let cook on low for at least 10 minutes. The longer it cooks the more the flavors will develop. I like to simmer it for 30-40 minutes. Serve over zucchini noodles, spaghetti squash, a sweet potato, or just eat it out of a bowl!
  *healthy ketchup recipe:
  • 28 oz can tomato puree
  • 12 oz can tomato paste
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup red wine vinegar
  • 1 tbsp. dried minced onion
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
