Lemon Poppy Seed Protein Bites Recipe
Who loves lemon poppy seed muffins as much as I do?! They are literally a staple of my childhood. Now, I find myself always turning down muffins because I know how much sugar they are made with. However, with these protein bites, you get the flavor of the muffin, and none of the sugar and calories!

Ingredients:

- ½ c old-fashioned oats (gluten-free)
- 1 tbsp poppy seeds
- ½ tbsp Truvia
- 1 tsp freshly grated lemon zest (about one medium lemon)
- 6 tbsp freshly squeezed lemon juice
- 6 tbsp water
- In a large bowl, combined the protein powder, oats, poppy seeds, Truvia, and lemon zest. Add in the lemon juice and water, stirring until fully incorporated. Shape the mixture into 28 small balls, and place into a container. Seal and store in the refrigerator until ready to eat. Note: you may need more or less water due to the type of protein powder. Add it slowly and continuously until you have a dough that sets together.
