This grilled chicken and pineapple salsa recipe is the most perfect summer recipe. It is so fruity and fresh, yet you get that delicious flavor of the char on the chicken! If that doesn't scream SUMMER TIME, I am not too sure what does. Make this recipe for the upcoming holiday weekend, MDW 2018!!!!!

  Ingredients:
  • 4 limes, juiced
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp honey (optional)
  • 1 lb. boneless skinless chicken breasts
  • 1 cup chopped pineapple
  • 1 avocado, diced
  • 1/4 red onion, diced
  • Freshly ground black pepper and salt, to taste
  Directions:
  • In a large bowl, whisk together juice of 3 limes, olive oil, 1/4 cup cilantro and honey. Season with salt. Add chicken to a large Ziploc bag and pour over marinade. Let marinate in the refrigerator at least 3 hours, or up to overnight. When ready to grill, heat grill to high. Oil grates and add chicken, then grill until cooked and charred, roughly  8 minutes per side. Meanwhile, in a medium bowl, stir together pineapple, avocado, red onion, remaining lime juice, and remaining tablespoon cilantro. Season with salt and pepper. Spoon salsa over chicken and serve.
