At first, going carb-free can be challenging. We love making these cucumber 'subs' to satisfy our sandwich cravings, yet avoid the guilt associated with cheating! They are super easy and so delicious.

Ingredients:

  • 1 large Cucumber, halved and halved again lengthways
  • 1/2 - 3/4 large Avocado
  • 1 tablespoon lemon juice
  • Chopped sweet onion
  • 1 celery stalk, finely sliced
  • 1/3 cup parsley, chopped
  • 1/2 cup cooked, shredded cold chicken

Instructions:

  • Using a small spoon scrape out seeds from cucumber. In a small mixing bowl mash avocado and add lemon juice, onions, celery and parsley and combine well. Mix in the shredded chicken. Spoon filling into cucumbers.
