Slow Cooker Chicken & Rice Soup
I know it's summertime, but soup is amazing any time of the year. This soup in particular is super easy to make and so yummy! When it's raining out and you're feeling super lazy, for sure make this soup :).

Ingredients:

- 1.5 pounds chicken breast
- 1 large onion, diced
- 2 cups chopped celery
- 2 cups chopped carrots
- 2 bay leaves
- 2 teaspoons dried parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground sage
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 4 cups no salt added chicken stock
- 3 cups water
- Combine all ingredients in a large slow cooker. Cook on low for 6-8 hours. Remove bay leaves and discard. Remove chicken breasts, shred and return to slow cooker. Taste and season with salt and pepper as needed before serving.
