SWEET POTATO ZUCCHINI FRITTERS

Ingredients:
- 3 cups sweet potato, shredded
- 2 cups zucchini, shredded
- 1 large egg
- 2 tbsp gluten free all purpose flour
- Salt and pepper, to taste
Directions:
- Preheat the oven to 375 degrees
- Start by shredding the zucchini and sweet potato into a large bowl.
- Add the egg, flour, salt and pepper to taste (add any additional seasonings/herbs that you may like). Mix all the ingredients together and begin to form the patties (squeeze out the extra liquid)
- Place the patties on a baking sheet and bake for 10-15 minutes on 375 degrees. Lower the oven to 350 degrees cooking the patties for 15 minutes then carefully flip the fritters and continue cooking for an additional 15 minutes.
- SERVE while nice and hot! ENJOY
