PUMPKIN-TURKEY CHILI

PUMPKIN-TURKEY CHILI

Ingredients:

  • 1 Tbsp coconut oil
  • 1 lb ground turkey/chicken (99%)
  • 1 tbs fresh sage, chopped
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 1 24oz can of pumpkin puree (baking section of store)
  • 1 red bell pepper, diced
  • 1 14.5 oz can/jar of diced tomatoes
  • ¼ tsp crushed red pepper flakes
  • 1 Tbsp chili powder
  • ½ tsp onion powder
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp turmeric

Directions:

  • PLACE a large skillet over medium-high heat and add oil. Swirl to coat the pan.
  • ADD turkey and brown until cooked through, mixing every few minutes
  • ADD onion and sage and saute with turkey until onions are soft, about 5 minutes.
  • Move the turkey and onion mixture to the crockpot.
  • ADD diced tomatoes, garlic, bell pepper, pumpkin and spices to the crockpot. Stir to combine.
  • COOK on low for 6-8 hours or on high for 3-4 hours
Separate into 3 equal volume portions/servings *ENJOY* Great recipe for fall/winter
