Protein Banana Muffins GFDF

Ingredients:
- 1 whole egg + 2 eggwhites
- 2 small bananas *mashed
- 1/4 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 2 scoops Unflavored Essential Base Protein
- 1/2 cup oat flour
- 1/4 cup Stevia
- 1/2 tsp. cinnamon
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. salt
Directions:

Preheat oven to 350

Whisk together the egg + eggwhites in small dish

In a medium mixing bowl, whisk together dry ingredients

Mash banana and combine with applesauce, vanilla, and egg mixture

Mix wet and dry ingredients until evenly mixed, then add 1-4 Tbsp water to thicken (as needed). Batter should be mixed thoroughly to avoid dry ingredient pieces

Divide batter between six lined muffin cups

Bake for 30-35 minutes until golden brown and a toothpick test is clean

Let cool completely before eating
**Storage in fridge up to 1 week
