MOM-APPROVED QUINOA

Ingredients:

  • 1 ½ cups uncooked quinoa
  • 3 cups organic vegetable broth (such as Swanson Certified Organic)
  • 4 handfuls fresh spinach leaves
  • 12 ounces roasted red peppers (approx. 4 red peppers)
  • Lemon juice
  • Olive oil
  • Minced garlic

Directions:

  1. Combine quinoa and vegetable broth in a saucepan; bring to a boil over medium-high heat THEN cover, reduce heat, and simmer 20 minutes or until broth is absorbed and quinoa is tender. Remove from heat
  2. Place fresh spinach in saucepan and add 1 tsp olive oil + 1Tbsp minced garlic + 1/3 cup lemon/lime juice; cover and put on low heat. Watch pot- likely fully wilted in under 5 minutes
  3. Slice roasted peppers (Easily found in a jar packed with water for quick cooking)
  4. Once spinach is wilted, add hot spinach(and lemon/garlic sauce it now has) to the cutting board and dice with roasted peppers
  5. Add vegetable mixture to cooked quinoa- Mix together and enjoy!
