Jamies Spicy Tomato Soup

Ingredients:
- 5 lbs diced tomatoes
- 1 Tbsp light butter ( Land o lakes butter + olive oil)
- 1 large white onion, chopped
- 1/2 cup fresh basil, chopped
- 1 1/2 Tbsp MINCED GARLIC
- 1/8 tsp pepper
- 1/4 tsp salt
- 1/2 tsp red pepper flakes
- 2 tsp sugar stevia
- 1 ( 32 oz.) container chicken/veggie broth
- 1 cup 0% plain Greek yogurt (or unsweetened DF plain coconut yogurt)
Directions:
- In a large dutch oven or pot, melt butter over medium-high heat.
- Add onion, garlic, basil, red pepper, salt pepper, sugar or sugar substitute, canned tomatoes, and chicken broth. Stir until well combined.
- Bring to a boil. Then cover and let it simmer for at least 30 minutes. Remove from heat.
- Let it cool for 10 minutes. Divide the soup into 3 servings. Blend each serving in a food processor/blender
- Repeat for the other servings.
- Pour puréed soup back into dutch oven or pot. Stir in 0% yogurt. Remove from heat and serve
